Breakfast Chia Pudding
Ingredients1/3 cup pecans soaked overnight in water
2-3 pitted dates, preferable soaked in water over night to rehydrate
3/4 cups filtered water
2 Tb. Chia seeds
Cinnamon to taste
Pinch of Himalayan Salt
Fresh or dried berries to top
Put the pecans and dates in a food processor with water and blend. You can leave a little texture to it. Place chia seeds and salt in blended mixture and stir. Chia will absorb water so if it seems too thick for your liking add more water. I put bananas on mine, but you can add any fruit, fresh or dried. Cinnamon is your choice of course!
Chia seeds do have a little crunch to them so you may also like to use them in salads. Smoothies, oatmeal, or mixed in a small amount of water will work too if you're looking to incorporate them in your diet. Enjoy!

ReplyDeleteSounds awesome! I saw a couple recipes for a chocolate chia seed pudding (as it acts as the thickener/gelatin) and also recommendations to put them in soup/stews as well. Can't wait to try.
