Here's an update on our little house guest (s). Two sweet little eggs just waiting to hatch. I haven't been back to peek in on her, so I don't know how they are doing. I worked a very long weekend so maybe in the next couple of days I'll check in. I try not to bother her.
Lately I've become aware of a whole new world of "healthy." Most recently I have done lots of studying on the "raw culture" and superfoods. I personally have enjoyed learning that I can actually heal myself through these deliciously raw foods. I want to share with you the amazing things I've learned, while showing you that anyone can eat raw! Raw, live foods, and superfoods have wonderful health benefits and healing properties. So, join me on my journey of this "Rawfully Wonderful" experience.

Lettuce Wraps with Avocado Coriander Sauce
I found this recipe from the "Plate of the Day" food blog. The entire posting from the website is not included here because there is some unnecessary bad language in the post, and I just don't feel like having that on my blog:) So, here are the ingredients:
Large swiss chard leaves
Cucumber (sliced)
Carrots (sliced)
Seaweed (I did not use seaweed in mine)
Basil leaves
1/2 cup of thinly sliced scallions and cilantro
Fresh alfalfa sprouts
Brown rice (optional)

Avocado Coriander Sauce
1/2 avocado
5 sprigs of coriander
Juice of 1/4 lemon
4 scallions diced
1 tablespoon of olive oil
1 teaspoon coriander seeds
1 small dried red chili (sliced)
Salt, pepper

Mix in a blender.
I thought that lettuce wraps would be a great post because of the fresh produce people are starting to get out of their gardens. Mine is going crazy and I LOVE it! The only thing that I used from my garden today was fresh cilantro and basil. I could have used carrots, but they aren't very big yet and I still had some left to be use.

Our new little visitor!
I realize this isn't about raw food, but I couldn't help but share this with you! We have a sweet little bird that has built a nest in our hanging basket. I noticed she was there last week when I tried to water the flowers. She flew out when I must've scared her. I've been checking on her and making sure not to soak her nest. I'll keep you updated our little bird friend!
