Winner

Today was the end of my work week, so I'm sorry to have kept you waiting to find out who the winner of the $125 Green Polka Dot Box membership is. I wanted to let you know as soon as I could, so tonight is the night!

Before I announce the winner, I just want to thank those of you that do read this blog. So, as you can see over the past several days of meal plans, it's nothing too fancy! I mix it up from week to week, and of course it looks different when I'm trying new things, but it works for me and I feel amazing!!

What do Raw Foodies eat?

What do Raw Foodies Eat? I hear this question a lot. My personal intake of raw foods tends to be pretty simple when I'm not trying out new recipes. I have to admit that sometimes I think people are disappointed to hear that I eat a lot of salads and fresh juices. I always figured that the "big time" raw foodies were likely making these gourmet raw meals everyday, while I consumed the same ole salad, piece of fruit, and fresh juices. I have since been enlightened that that is just not the case!

For Christmas, my husband bought me this great bundle of raw food info, which I loved! So thoughtful of him. I guess I should tell you that I sent him the link to purchase this bundle with an email that said something like this, "Hey babe! Here's a super great deal on a raw food info bundle, and I think you should buy it for me for Christmas. BTW, the special is over in three days so make sure you buy it soon." I sent similar emails on day #2 and day #3 just reminding him to "buy the raw food bundle before the sale is over!" This particular bundle consisted of about 25 ebooks. So much great information for under $30.

So, where was I going with this story? Right, what do raw food enthusiasts eat? One particular book in this "raw bundle" has the weekly meal plan of like 47 different raw food enthusiasts. Although I'm not supposed to share the specifics of this material with others, I can tell you that I was pleasantly surprised that my meal plans weren't much different than the real pros!! I have yet to post one of my personal days of raw food intake, but that's going to change!

I've decided to post several days worth of my own personal meal plans. I have been asked to do this in the past, but just haven't gotten around to it yet. Life is busy! Anyway, now is as good a time as any I think! Stay tuned because I'll be posting my meal plans for the next few days so you can see what I eat.

Time Zone

Sometimes I do my posts ahead of time, and I have been wondering why they don't actually get posted when I schedule them. Anyway, I finally figured out that my blog was set on pacific time. I'm not very computer savvy, and I'm not afraid to tell you that:)

I hope you all have a wonderful weekend! I will be heading to Chicago with my husband, brother, and sister-in-law for a weekend of great fun! I hope to make it to a raw food restaurant while I'm there, but we shall see if time allows! I'll make sure to fill you in if it happens!

Banana Chips

Banana Chips

 Place sliced bananas on dehydrator sheets and dehydrate at about 90 degrees for 3-4 hours. Great little snack to have on hand. I made this batch plain, but in the past have sprinkled them with cinnamon or a mixture of agave and cacao.

If you want, you can spray your bananas with ascorbic acid (vitamin C) to prevent them from turning the darker brownish color.

Something different

Have you ever tried a passion fruit? I had my first one this past summer. It's not something that you find at your normal grocery store very often, if at all. Whole Foods, Willy Street Coop, and any health food market should carry them. They are pink on the outside with a seedy yellow filling. Once you cut the passion fruit in half, you just scoop out the middle and eat it, seeds and all. Once you scoop out the middle, it kind of becomes liquid. It's a bit tart, but I love that. If you're up for something different, give them a try!


Passion fruit is a great source of dietary fiber, vitamin A, vitamin C, potassium, and the minerals, iron, copper, magnesium, and phosphorus.

Raw Vegetable Sushi Rolls.

 The two sides of the nori sheets look different. You want the more shiny side down (second pic below). If you have a rolling mat, it makes it much easier to get your rolls tighter. They are only a few bucks and can be found at Asian specialty stores or at most health food stores. I personally don't have one, but it's only because I keep forgetting to buy one. I think it would help the rolls to look nicer since they are more tightly rolled. I would make sure you like raw sushi before going out to buy a rolling mat.

If you decide to make a raw rice for the rolls, it will be pressed down right where my dressing is. Not quite halfway down the sheet.  Make sure you get the rice all the way to each corner of the sheet. You can make raw rice from parsnips if you want.
I had some left over dressing from making kale chips, so I spread some of it on my roll. 
Prepare all of your vegetables that you want to use. Here's what I chose to use:
cucumber, carrot, lentil mix sprouts, avocado, mixed greens, artichoke hearts, and the dressing The beauty of making raw sushi is that you can put anything you want in the roll. Marinated mushrooms, shaved ginger, peppers, sprout varieties, green onions, asparagus, etc are all great ideas!
Julienne cut vegetables makes it much easier to fit the veggies in the roll.  If you don't have a julienne slicer, just use a vegetable peeler. 



 Allow some of the prettier veggies to hang over each side. It will just make for a prettier presentation after you're done rolling!
 With moderate pressure, you just start rolling towards the other end of the sheet. If you have a mat, you will stop once your veggies are rolled and pull back to tighten the roll. Once rolled, wet the last edge of the sheet and it should stick to itself.
 You don't have to follow the little lines on the sheet for cutting. You can cut them to the size you prefer. Make sure you are using a very sharp knife. Dip the knife in water prior to cutting, and use a sawing type motion. I topped my rolls with white and black sesame seeds and a little sprinkle of kelp.


If you decide that you don't like the taste of the nori sheets, you can always use a large zucchini sheet (sliced with a vegetable peeler) to wrap your veggies in.

I don't do a fabulous job at this by any means, but they are still good! Happy sushi rolling!

Raw Chocolate Fudge.

HAPPY VALENTINES DAY!!!

I had every intention of blogging early today, but it just never happened. Sometimes the days just get away from me. But, late is better than never!!  I feel like valentine's day is all about chocolate and flowers. At least that's what's advertised all over the place. So, in honor of a healthy valentine's day, I just wanted to say, "Do something good for your heart, nutritionally good!" Below a great heart healthy fudge recipe by Shannon Leonne. 




 CHOCOLATE FUDGE BY SHANNON LEONNE

¼ c coconut butter raw, unbleached and organic!
¼ c raw honey
¼ c organic cacao powder, the cacao bean is the actual chocolate bean, only unroasted with tons of antioxidants and love chemicals
½ t vanilla
1 drop pure organic essential oil of peppermint, or orange, or lavender, or cinnamon
Blend away to Chocolate Heaven, freeze for a more solid consistency


 Below is my free hand heart shaped fudge. You could totally use a spatula to flatten the bumps out, but I was in a hurry. I put mine in the freezer and it turned out perfect. I placed my heart on waxed paper so that I could easily remove it once it hardened.
 Turn it over, and here's what it looked like! I had a couple of girlfriends over tonight, and I mentioned that I had great ideas of a strawberry or raspberry drizzle, but that didn't happen either. So, here's the end result and it was quite tasty! The honey gives it the fudge type consistency and the coconut butter allowed it to harden. It tastes like a nice mix of honey and dark chocolate!

Raw Food Night!

Guess what last Thursday was? Yep, raw food night at a local vegetarian restaurant called, The Green Owl Cafe! This is only offered once a month here in Madison, so I really look forward to it. If you remember, I missed it last month because we had a little snow storm. Such a bummer, but it was worth the wait for last night's menu. It's probably been one of my favorite menu's since I started going. Here's what they served.

Small Plates
Seasonal salad of fresh greens, orange sections, red pepper slices, and creamy avocado dressing topped with pumpkin seeds
Creamy broccoli soup topped with eggplant "bacon"
Cucumber, "cream cheese" and fresh herb tea sandwiches on flax bread
Entree
Mixed vegetable noodles in a creamy orange-jalapeno sauce with fresh cilantro. Served with a side of jicama slaw.
Dessert
Carrot cake with "cream cheese" frosting.

Main course is at the left, jicama salad is at the top, and the greens are pretty self explanatory!

The eggplant "bacon" really tasted like bacon I thought. Especially mixed with other things. If you can see by the fork, it was also on top of the flax bread.


This carrot cake was surprisingly very good! The "cream cheese" frosting was delicious. It didn't taste like any sort of nut to me, so I'm not sure what was in it. 
 My sister-in-law Emily was my raw food date for the night! It was her second time going with me and this menu was much better. The last time she came was my least favorite menu, so I'm glad it was a good one this time!! I would tell you which item was my favorite, but I liked them all so much that I can't decide. The flatbread and jicama was probably my favorite, but I loved the cilantro in the main dish and the "bacon" on the soup. It was all great!

Chia Breakfast!

This recipe is by Jasmine Blackmeir from The Pink Avocado. She has a great story about starting a raw diet. She initially decided to introduce a raw diet because she was trying to kick her type 1 diabetes. Since the diet changes, she has been able to feel better, stabilize her blood sugars, drastically decrease her dosages of insulin, and lose some weight to boot! So, this is a great breakfast recipe. 

Chia Seeds. 

I first heard about Chia Seeds from my midwife right after I had my son. I have been eating them in some form since. In the research that I found, Chia was widely used by the Aztec, Incan, and Mayan cultures as a staple back in the 1500's. The Mayan word for chia is "strength." The "running messengers" of these cultures would carry a small pouch of Chia to keep them energized, full, and hydrated on their long runs. They are great little seeds! The seed is rich in omega-3 fatty acids, antioxidants, calcium, potassium, and fiber (1 oz. gives you 11g of fiber). The seeds can be soaked in water to form a gel-like substance, which is thought to create a barrier between the carbohydrates and the digestive enzymes that break them down. This allows you to feel full longer!
This was taken from my iphone since our camera broke on vacation.  I put banana and a drizzle of agave on mine. 


Chia Seed Super Cereal
Makes 2 servings


5 Tablespoons chia seeds
Handful of sliced almonds
Handful of walnuts
½ – ¾ cup almond milk
1/3 cup fresh shredded coconut
Splash of vanilla extract (optional)
¼ teaspoon cinnamon (optional)
Few springs of mint (optional)
Fruit of choice: I prefer fresh berries or a sliced banana with a dash of cinnamon.


As soon as you wake up in the morning, put the chia seeds, nuts, and coconut in a blender and cover the whole mixture with almond milk. Stir after 10 minutes to avoid clumping and let sit. 


After about 20-30 minutes total, add a splash of vanilla and pulse the mixture in the blender until it’s blended. Top with fresh berries, a few sprigs of mint, and a splash of almond milk.


Note: I reference the measured ingredients above only as a reference point. Basically you want a ratio of 1:3 chia seeds to almond milk, and a handful of the nuts!


I didn't put any mint in mine for two reasons. 1. I didn't want mint in it! 2. I ran out of it anyway! You could add some variation to this recipe as well. Soak your Chia Seeds in apple juice instead to change the flavor. This is a nice alternative for breakfast and since I tend to eat raw oatmeal every morning, it's a nice change on occasion. You can use Chia Seeds for tons of other things too. Mix them in smoothies, juice, make a pudding, sprinkle on salads, add to granola, etc. You can grind them as well!

Some of the benefits of Chia:
It's double the protein of most other seeds and provides all of the essential amino acids! It is an excellent source of calcium (higher than milk). High in boron, potassium, and iron. Also a great source of antioxidants, fiber, and essential fatty acids!

Documentary Day #3

KILLER AT LARGE: Why Obesity is America's Greatest Threat.

This documentary starts out with Brooke, a 218 pound, 12 y/o girl that wants lipo suction. Her parents don't want her to be made fun of and she wants to fit in. They end up going through with the lip suction and remove 16 liters of fat from this child. She lost 35 pounds in one treatment of lip suction. Her parents seemed to be very supportive. She got down to a weight of 155lbs on the show. The biggest concern was if Brooke would be able to keep the weight off.  Unfortunately, 7 months after the procedure she gained the weight back. Brooke's mother was interviewed and didn't think that the weight gain was emotional, but genetic. How can she be in such denial over her own child's struggles? It blows my mind and makes me so sad. One of my largest concerns with allowing a 12 y/o to have lipo suction is that it doesn't address the underlying problem, nor does it teach her proper eating habits, nutrition, and exercise. It's allowing her to temporarily run away from a problem that really hasn't been solved. 

Some of statistics that were discussed were mind blowing and proved that the United States is struggling with an "epidemic of being fat". 2/3 of the nation's people are overweight, which leads to so many diseases. Diabetes, high cholesterol, heart disease etc. And even worse is that more than 9 million children are seriously overweight. The diabetes rate is increasing drastically d/t children being overweight. They are predicting that 45% of our children will be insulin dependent in the next 10 years. 

In comparing our current situation with the past, millions of years ago a large amount of time was spent collecting the food supply where as today, there are fast food restaurants and large fat supplies in the food. One doctor explained that he thinks the overeating that people do has an underlying problem besides just self-control. Sometimes more of our decisions in a day are made about food than anything else. There are heavy marketing techniques used to promote unhealthy food and, it's so readily available to us. Everywhere you look there's some sort of food, vending station, advertisement, etc.

Speaking of self-control, people also tend to overeat d/t the portion sizes that are served or bought. We tend to think that if it's served to us, it's the appropriate serving size. 

Barry Glassner, author, says there are many things contributing to obesity. Social factors, genetics, stress patterns, etc. Stress can cause cravings to food and a large portion of humans are under some kind of stress. Your body loses the ability to burn fat efficiently as well, when under stress. We tend to work harder, sleep less, and fill our lives with non-stop activities. Stress can also be caused by the "scare factors" used in the news. There were several clips that were so familiar to hear. 

A Rabbi on the documentary explained that super thin is just as dangerous, which I believe is true. There needs to be a happy medium. Curves used to be so attractive and our culture has gotten away from that. "Thin is in." I think it's more about a healthy lifestyle than about a weight. If you're making healthy choices, you won't need to worry about being overweight.

President Clinton was also interviewed and talked about his upbringing, being overweight, and eating too much. He underweight cardiac bypass surgery and has since learned to choose healthier options. So, just because you've learned something a certain way doesn't mean you have to continue down those unhealthy paths. It's a choice to change your life!

There were also a few interviews with young people that grew up being overweight. They talked about being made fun of as they grew up, the massive amounts of food that they ate, and how their upbringing influenced them. At some point, someone down the line has to decide that they are going to make some changes and, then they can pass those healthier choices on to their families and friends!

So, this is just a portion of the documentary. There's lots more in this one that is worth hearing. I really liked it alot and felt that it kept my attention, so if you have some time to watch it, it's a good one. Watching videos like this can always help to motivate and reinforce the benefits of healthy living!!

Sun Warrior Protein!

So, I told you yesterday that I had found a raw-vegan protein powder that I was in love with. I've been looking forward to sharing it with you for some time now, but wanted to make sure I really liked it first. I am by no means saying I'm a protein expert, but over the years, I have tried a lot of different varieties and have learned a fair amount them. I've tried several different vegan proteins as well, but wasn't too crazy about any of them. Of course I'm sure there are plenty out there that I have not tried. 

Over the years of drinking protein shakes, I have sampled many conventional types of whey proteins that also don't taste that great. I prefer to stay away from dairy so whey is obviously not a good choice. Protein isolates tend to be processed so I try to stay away from those as well. Over the past 4 1/2 years I've been using a whey protein isolate made by my competition nutritional trainer. It's been the best tasting whey protein I've ever had, but I just prefer to be as raw and unprocessed as possible, especially considering my raw food lifestyle. So, introducing Sun Warrior Raw Vegan protein powder.

I love this stuff! It has all of the complete amino acids needed to help build healthy lean muscle. I like to mix mine with almond milk. You could experiment with other nut milks too to give it a slightly different taste.
